About Us
Chef Michael McMillan, a graduate of the prestigious Culinary Institute of America in NY,
has tenured at some of the most acclaimed restaurants in the country.
McMillan worked with chefs, such as Trois Jean in New York City under Master Chef of
France, Jean Louis Dumonnet; and with Dean Fearing at The Mansion on
Turtle Creek in Dallas, Mobil five-Star/AAA 5 Diamond restaurant and hotel.
McMillan was born in Aurora, Illinois, and raised in Jacksonville, FL.
With 29 years experience in the restaurant industry,
McMillan has worked all phases of the restaurant business. After five years as General
Manager and Executive Chef of La Parisienne in St. Augustine,
McMillan and wife, Christine, opened Opus 39 Restaurant &
Food Gallery in 2002.
McMillan's philosophy is to use the freshest ingredients in his restaurants.
Everything is made from whole, fresh, seasonal foods and many items are flown in
fresh from Spain and other exotic locations. Opus 39 changes the menu daily and
the Tasting Room menu changes with each season. The desserts change
more often.
Christine McMillan from Orange Park, FL holds a degree in
Psychology and Communications from Florida State University.
After a stint in Human Resources and management of non-profit agencies for 10 years,
including an assistant directorship of the Poughkeepsie Partnership in NY,
Christine joined her husband in the restaurant business.
"My favorite part of the restaurant business is the people and the wine.", says
Christine. Most weekends, you will find Christine at Opus 39
Restaurant & Food Gallery, the couple's first restaurant where
she shares her expertise with their rare wines in Opus' Retail Wine Shop.
The rest of the week she splits her time between the promotion of both restaurants
and their two children, James and Meredith.
Michael Lugo studied hotel and restaurant management at the University of North
Texas and started in the restaurant industry as a server for a Pappas Restaurant
Group brand in Dallas, TX. It wasn't long before he climbed the ladder to head
waiter, trainer and then kitchen manager. After a stint as bar manager at Joe's Crab Shack,
he entered the fine dining category in a management role for Food Star Restaurant Group in
Texas and the Chamberlain's Steak and Chop House in Dallas. There, he worked for seven years
and cultivated an in-depth knowledge of wines as a wine steward, educating guests about the
restaurant's 1000 bottle wine list.

The Tasting room is located in the same building the Vanderbilt family used in the 1800's
as a fund raising facility for Marineland, "the world's first oceanarium."
The Tasting Room features a 60-foot dining area with a wrought-iron
enclosed wine room, a 20-seat private dining room and a courtyard for dining.
The atmosphere is casual, yet elegant, and the menu features tapas-style fare.
